Has anyone here taken a more DIY approach to this, vs a structured program? I missed the deadline for applying to the CUNY Hunter program and am looking at other ways to start in the Fall or Spring semester.

I did an online DIY, self-paced except for one class. Limits the schools you can apply to and potentially doesn’t carry the weight of an in-class version. I went that route because it was the only one that fit my unpredictable work schedule.
I took most of my classes through Univ New England. I think they now offer pretty much every core prereq. It’s not cheap as far as undergrad courses go, but it’s an option.
A lot of other people on here would tell you to hold off and do an in-class post-bacc. If you’ve taken all of the courses before, some schools won’t accept you into a formal course, some will. If you HAVE taken all of the classes before and did well in them, I’d recommend taking a couple of other upper level courses to show continued academic prowess and doing a prep course as a refresher for the MCAT.

DIY will be fine at any of the CUNY or SUNY schools (BTW, I am on the Queens/Nassau Border). There is no reason to earn a second bachelors though registering as such any school may get you priority in classes. Just take what you need and finish up.
I have been contemplating this as well and will likely apply to Hunter as a second bachelor/transfer student and start my journey in Spring 2016. I still have to take Orgo and Physics to be considered eligible for most schools, but I may re-take Biology, Biochem, and Psychology. Best of luck!
My issue was funding. My last sciences were over 30 years old. I needed a formal Post-Bacc. I got accepted to one, but could not find ANY funding for a NON-degree bearing program. Private schools would not take me for a second Bachelor’s, but the SUNY schools would. So I am at a SUNY as a Bio major - fully funded by financial aid.
The financial difference is large. Unless you take a full schedule, you will be charged more per unit; additionally, it is very unlikely that the school will allow you to file for federal loans if you are doing it all on your own.
