How to Evaluate a Post-bacc's/SMP's Curriculum

Hi,
I was listening to OPM ep. 188 and Dr. Gray made a big deal about how big of a deal a program’s curriculum should be to a non-trad as they consider which programs to apply to. My question is, “How should I evaluate it?” I’ve seen the list of classes on each program website; noted whether each was exclusively (or almost exclusively) comprised of biology courses; and looked for whether the courses are taught at an undergraduate, graduate, or professional level. I feel like I should be doing more to really consider the curriculum.

(I do also check for MCAT, app, and interview prep and take note of seminars, but those have a separate space on my spreadsheet.)
