Letters of Recommendation

I am 35 years old. I have actually previously attended medical school ten years ago, but left (in good academic standing) due to personal/family issues. Since leaving medical school, I have attained a MS degree in Biochemistry and have been teaching Anatomy and Physiology at a community college (since 2002).

I have not kept close ties to any of my college or graduate professors. I plan on completing an EMT/paramedic program prior to entering medical school. My question is this: Do you think it would be sufficient to include letters of recommendation from coworkers (this would include other college professors that I work with) and possibly one of my current EMT/paramedic instructors? How important in a recommendation from one of my actual professors?

Thanks!
